How It Began

When space became available in the new Austinville 78750 center, Steve Simmons, creator of the Austinville shopping center suggested that Amy's create a bakery! Steve's idea was too good to pass up! The synergy of local businesses was perfection (iFly, Amy's Ice Creams, Phil's Ice House, Dirty Dog, Papa Lote, Tejas Running and Trails, and Strut). A team of Amy's entrepreneurs, lead by Erin Fellows, started the business creation process- brainstorming the perfect name, engaging Arts & Rec for the perfect logo, and baking, baking, tasting, baking ...

Opportunity

Amy's goal was to produce more ingredients locally and from scratch for ice cream ...  chaos ensued ...

Entrepreneurship 

Beyond ice cream, Amy's mission is to encourage entrepreneurship through education and real life experience. 

Creativity

Building on years of continuous product evolution, Amy's began a 10 month journey to develop a menu of mouthwatering creations.

Erin Fellows

Managing Partner

Erin developed her love for baking while working as a sous chef under Chef Robert Citto at The Vista Verde Guest Ranch in Colorado. She oversaw all of the desserts and breads for the resort. She returned to Austin to attend The Cordon Bleu Cooking School graduating in 2009.

Upon graduating she applied to Amy’s Ice Creams in the catering and product development departments where she was hired and worked closely with Paula Kulp, Product Designer. Erin was responsible for adding many signature homemade ingredients to the super premium ice cream production. Erin developed the ice cream cake department at Amy’s which grew to $100,000 in sales it’s first year.

Erin was an easy choice for Bakery Partner when the creation and production of homemade sweets began to outgrow our ice cream production facility. Erin wrote the BAKED by Amy’s business plan and developed the product selections along with a carefully chosen team of talented designers and bakers.

Vannessa Holter

After working in the fashion industry for 11 years, Vannessa joined the Auguste Escoffier School for the Culinary Arts, focusing on pastry arts all while working in a small bakery in Austin, Texas.  Upon graduation, Vannessa became a cake decorator for Central Market, crafting gorgeous cake designs. She also created a successful wedding program, which is still in use today. Vannessa joined Amy’s Ice Creams as head ice cream cake decorator before joining the Baked by Amy’s team.
